So this has become my favorite breakfast, Yes! I said BREAKFAST. I make a big pot and large pot of rice. Top with a fried egg, and WALLA! a quick healthy breakfast that isn’t full of sugar. It is so rich, creamy, savory and the beef bacon gives that extra pop of smokey flavor!
Ingredients
- 1 pack beef bacon
- 6 tsp dehydrated onion (or 2 medium sweet onion, diced)
- 4 tsp dehydrated crushed red pepper (or 2 green bell peppers, diced)
- 4 dehydrated celery stalks (or 4 fresh celery stalks, diced)
- 4 tsp dehydrated garlic (or 6 cloves garlic, minced)
- 6 tsp dehydrated parsley (or 4 tablespoons chopped fresh parsley leaves)
- 2 tsp chili powder (use more if you like spicier or use salt free Cajun seasoning if you want a hint of that New Orleans Flavor)
- 6 cups chicken broth
- 2 tablespoon beef tallow
- 4 tablespoons tomato paste (or 12 tablespoons tomato sauce)
- 6 (15-ounce) cans beans, drained and rinsed (mix and match small kidney beans, pinto beans, white kidney beans. Whatever your family likes or whatever you have in the pantry).
- 2 tsp hot sauce
- Kosher salt and freshly ground black pepper, to taste
- Rice
Instructions
- In a large stock pot cook your rice to the package instructions.
- Cut your beef bacon into bite size pieces, add 1 cup of water and bacon pieces to a fry pan. Cook until water is gone and beef bacon is brown to your desired level.
- Put dehydrated onion, dehydrated crushed red pepper, dehydrated celery stalks, dehydrated garlic, dehydrated parsley, and chili powder into a blender. Blend on high until powder. You may use whole too, my family doesn’t like chunks. I also find with ingredients being freeze dried or dehydrated I don’t have to spend as much time reconstituting.
- Poor blender into a large stockpot and roast over medium heat when you begin to smell the spices, add in your beef tallow. chicken stock, beans, tomato paste, slightly smashed beans and hot sauce.
- Bring to a boil; cover, reduce heat and simmer for 15 minutes. Uncover; continue to simmer until reduced to desired consistency up to an additional 15 minutes.
- If desired; season with salt and pepper, to taste.
- Serve immediately on top of rice. I like to put a farm fresh egg, fried in the beef bacon grease on the top.
tips and tricks for success
- I prefer smaller beans but you can use whatever you have. No need to soak them since this recipe calls for canned beans. Mix and match small kidney beans, pinto beans, white kidney beans, black beans. Whatever your family likes or whatever you have on hand.
- Lightly mash the beans. Once everything is together, use a potato masher and lightly mash the beans. Just a little, not the whole pot, this gives the sauce a nice thick creamy texture.
- Serve with homemade biscuits, flatbread or cornbread. Add a fried egg on top to make it a breakfast or brunch dish.
- Freezes beautifully. You can also freeze for future meals, just don’t include the rice.
